Being a busy professional with 4 kids, I don't have a lot of time to prepare complicated time-consuming meals during the week. On weekends I may spend more time to make something more time consuming, but for the most part I focus on items I can prepare in 30 minutes or less.
Most traditional recipes below require some level of eggs, dairy, meat or gluten. As I've been spending time in kitchens since I was a young kid, I don't really have recipe books for anything (it's all in my head). But over the years I have adapted my cooking to eliminate many of the allergens, and in many cases, also eliminated animal based ingredients. My family doesn't miss those ingredients at all. And as I prepare these meals, my daughter has asked me to document them so they (and others) can replicate them.
